Salted Caramel Crust Recipe With Bowmore Whisky

Salted Caramel

Bowmore whisky is one of the oldest single malt scotch whisky brands in the world (est. 1779) and a name most father’s recognise, appreciate and enjoy. While their bottle prices vary, it’s latest offering – Small Batch – is affordable at a RRP of £32.99 and is widely available from May in Sainsbury’s, Tesco and Morrisons, so would make an ideal father’s day gift for most daughters and daughter in laws.

As Father’s day is all about making your dad feel special, take a look at this Salted Carmel Crust recipe with Claridge’s former Head Chef Mark Sargeant , which is quick and easy to make at home and complements the Whiskey’s tones perfectly – making serving your father with a relaxing Single Malt a fun experience and a real occasion.

INGREDIENTS

75g unsalted butter
50g soft light brown sugar
50g caster sugar
50g golden syrup
125ml double cream
1tsp sea salt
1 tbsp Bowmore

METHOD

Melt the butter, sugars and syrup in a small heavy based pan and simmer for 3 minutes. Add the cream, whisky and sea salt then simmer for another minute or 2 until it thickens. Cool the caramel then dip the chosen glass rim into it and then into some fine caster sugar. Spoon a small amount of sauce into the bottom of the glass and then chill in the fridge for at least an hour. Pour Bowmore into the glass and enjoy.
