Autumn Baking | The Easiest Autumnal Cake To Impress Your Guests – As the seasons change I am unashamedly embracing all things autumnal at the moment. I feel as though Christmas gets a lot of the focus at this time of year but we end up missing out on the chance to fully celebrate the change of the season, cosy autumn days and Halloween!

This year I’m making more of an effort to get into the kitchen and bake some treats with an autumnal twist. Thanks to the very lovely team at AO.com I also have a shiny new KitchenAid stand mixer to help me along the way.

I have wanted a KitchenAid stand mixer for years and finally getting my hands on one has made me so much more productive in the kitchen. I opted for this gorgeous Lavender KitchenAid as we will need to update our kitchen soon as part of our ongoing home renovations and this will go with whatever colour scheme we pick. It is modern, classic and seriously stylish.

For my autumnal cake I knew I wanted to keep it simple and rustic. I am definitely not one for creating elaborate designs out of icing or moulding intricate figures! I opted for an easy Victoria Sponge recipe with lots of fresh seasonal fruits on top. I used this recipe and doubled the ingredients to make it slightly more impressive.

The KitchenAid made the whole thing so easy and it is much quicker than having to beat all of the ingredients by hand. If you are short on time you can throw everything into the mixer and let it do the hard work for you. The cake batter comes out smooth, creamy and ready to scoop into your baking tins within a few minutes.

For decoration I used buttercream and seasonal fruits like figs and blackberries (I was going to caramelise some fresh pears for on top as well but I totally forgot!) I then added walnuts for a little bit of crunch. Pile all of these up nice and high and you’ll have an autumnal cake that looks way more impressive than it really is…. but shhhh!
