Sweet Pork Skewers (image above)
3 tablespoon Thai Taste Sweet chilli sauce
1 tablespoon Thai Taste Oyster sauce
1 tablespoon Thai Taste Fish Sauce
1 clove garlic – crushed
1 hot red chilli – deseeded and finely chopped
Squeeze of lime juice
500g Pork Shoulder – diced
Makes about 6 pork skewers
In a medium bowl mix together the Sweet Chilli Sauce, Oyster Sauce, Fish Sauce, Garlic and Chilli. To this add the diced pork and turn together thoroughly with your hands ensuring the meat is well coated. Cover with cling film and set aside in the fridge to marinate for at least 2 hours.
Take your skewers, (ensuring that if they are wooden they have been soaking for at least several hours to prevent them catching fire) and slide 3-4 pieces of pork onto each skewer. Make sure the cubes of meat are tightly packed together.
Cook on the Barbeque or a griddle pan over a medium heat turning regularly until the pork is deliciously caramelized on the outside. Please ensure the meat is thoroughly cooked through before serving.
Great with Thai marinated barbequed veg!
This recipe will also work well with chicken. For an alternative marinade why not try replacing the oyster sauce and fish sauce in this recipe with 2 tablespoon of Thai Taste Smoky Barbeque sauce.
BBQ Sweet Chilli ribs – Brilliant for BBQ
1 Tbsp honey
5 Tbsp Thai Taste sweet chilli sauce
3 Tbsp Thai Taste soy sauce
A full rack of ribs
In a large bowl, mix together the honey, sweet chilli sauce and soy sauce. Take out a quarter of the marinade in a small bowl for basting.
Place the meat into the large bowl of marinade and mix the in the ribs. Cover and refrigerate for 2 hours.
Preheat a barbecue/grill on medium high heat.
Lightly oil the barbecue cooking grate. Place the meats on the grate/grill and cook for 10 minutes per side, or until cooked through. Baste frequently with the reserved sauce during the last 5 minutes.
Serve the ribs with a salad
